I need to know that I’m not alone. Really.
Every afternoon, when the clock threatens to strike 3pm, my brain starts telling me things like: Jodi, you should have a slice of cake. Jodi, you really should go and buy a slice of cake. Jodi, how about that cake? Before long, I’ve conjured up an image of moist, gooey chocolate cake in my head and I CANNOT concentrate until I’ve shoved it down my throat.
So, most of the time I do not have time to leave my desk, get in my car and go and buy a piece of cake. Or, if I’m at home, I’m just (shamelessly) too lazy to get off my derriere and actually bake it myself. Now, here we go: I’m here to save your life. Two words, people: MUG. CAKE (cue the angels singing). These things of beauty do not need an oven, strenuous mixing and those agonising hours of waiting. All you need is a mug, a microwave and a few simple ingredients which, chances are, are lying in your kitchen. Let’s go!
Nutella Mug Cake – For The Chocolate Hog
Strawberries and Cream Mug Cake – For the Lah-Di-Dah
1. Lightly film the inside of your mug with cooking spray and let it dry.
2. In a separate bowl, mix the egg yogurt, oil, baking powder, extract, sugar and flour until completely smooth.
3. Fill the mug to halfway full and microwave on high for 3 to 4 mintues, or until a cake tester comes out clean. Top with strawberries and whipped cream and serve.
